Easy Fish Pie
Sometimes you just need a pre-made dish that you can take from the freezer and pop into the oven. This delicious five-star easy fish pie from Donegal chef Brian McDermott is perfect for the whole family and easy to make. Check out the full recipe HERE. Fish Cake Balls (for picky eaters!)
This is a personal favourite for our customers! You can make these easy fish cakes from any pre-cooked fish such as our Atlantic Treasures smoked mackerel but they also work really well with baked salmon or haddock fillets.
All you need to make them are potatoes, 200g of fish, small lemon, black pepper, crackers or breadcrumbs and sunflower oil.
These go great on their own or serve it along with some pasta.
Hoisin Mackerel Pancakes
Swap your usual duck pancakes for these delicious Hoisin Mackerel Pancakes. They are so simple and our Atlantic Treasures Honey & Mustard Smoked Mackerel fillets go great with this dish. These might work better for the teenagers in the house. Here’s what you need:
3 Atlantic Treasures mackerel fillets, all bones removed, cut into finger-length strips
2 tbsp hoisin sauce, plus extra for dipping
4 spring onions
½ cucumber
2 small gem lettuces
1 tsp vegetable oil
10 Chinese pancakes (available from supermarkets nationwide)
Method
STEP 1: Marinate the mackerel in the hoisin sauce while you prepare the veg. Cut the spring onions and cucumber into thin matchsticks, and separate the lettuce leaves.
STEP 2: Heat the oil in a large frying pan over a medium heat. Add the mackerel and fry for 3-4 mins until sticky and caramelised. Heat the pancakes following pack instructions. Serve everything in the middle of the table and let everyone help themselves.
